Over twenty years ago, our family began a tradition of smoking salmon. After a few batches, we started making pounds at a time. We froze some, put the rest in Tupperware, and kept it handy in the fridge. The kids would have it daily for an afternoon snack. We used it for lunchmeat, in casseroles, chowder, party platters, and as simple finger food. It was a simple, delicious food that we loved, and that was that. A few years passed, and we began hearing about the incredible health benefits of having salmon in one's diet. It was an added bonus to that tasty staple we kept in the fridge!
Over the years, we perfected our natural hickory-smoked salmon. It became a favorite of our neighbors and friends, who all knew where to find it in the outdoor freezer. We couldn't keep enough on hand! Finally, we decided to obtain our bonified license and FDA approval, so we could share our family favorite with the world.
